Banana Pancakes

I found these on Pinterest a few weeks ago 
& literally can't get enough. 
So simple, healthy and flavor packed. 

And yes those are fresh orange segments, not ones from a can. Hah. 
Banana Pancakes
1 ripe banana
2 eggs
1/2 t. vanilla extract
dash of cinnamon
cooking spray

Mash banana, add eggs and scramble until combined well.
Add vanilla & cinnamon.
Cook in non-stick skillet with cooking spray.
Serve with your favorite syrup or simply by themselves.
Enjoy!

*Excellent source of protein & potassium. As well as gluten free.
