Here's the Mail!

As most of you know, my husband Mr. Army Man is deployed right now.
I've tried to come up with fun care packages so he doesn't just get the same ole same ole.
I feel like all I ever send over is necessities. 
I got the idea from Kelly Ginn from this post.

I made a package from our dog, Libby.
She included:
A football
Frisbee
Animal Crackers
Yoo-Hoo
Dog Bones
Spiderman Bandaids
Cracker Jacks
And a handmade card... 
(Isn't she the sweetest?)

Screen on the Green

Every Friday night from April to June and then from September to November, Sanford hosts a Screen on the Green movie night beginning at dusk. 
This Friday Mrs. Lynch, joined me for the showing of Jumanji.
We packed a picnic of cheese enchiladas and fried chicken. (Random, I know.)
And camped out on a blanket.

I love fun little outings such as this..
In two weeks we will go back for the showing of Meet the Robinson's.
I can't wait. 

Downtown Sanford Inc. not only hosts this event but also a Farmer's Market every week and 3rd Thursdays. Where all the downtown shops are open until 7pm. They host give-aways, have discounts, and provide refreshments. How awesome is that?
I love living in such a cute small town that gives back and provides fun activities and ways to get involved with the community!

Beef Empanadas

For those new followers, I am in culinary school.
And I made this delicious empanada recipe the other day in class and it was so good I had to share.

Filling:
3 T. evoo
4 oz. onion, minced
2 oz. red bell pepper, minced
1 t. red pepper flakes
1 t. paprika
1 t. cumin
6 oz. beef (not ground), minced
2 oz. russet potatoes (peeled, diced small)
2 oz. green olive, about 4 large or 6 small
1 oz. green onion, minced
1 hard boiled egg, chopped fine
(everything sound be small to fit inside a wonton wrapper)

Heat oil over medium heat and add onion, bell pepper, red pepper flakes, paprika, and cumin. 
Cook until onions are soft.
Add beef, cook. Stirring until meat is brown and cooked.
Correct seasoning with salt and pepper. Set aside to cool.
Add cooked potatoes, green onions, egg to meat mixture.

This is what it should look like:

At this point you need to decide whether to deep fry or bake.
I fried in class. It is quicker.

To assemble:
Place small amount of the mixture inside a wonton wrapper. 
Take your finger, dip in a cup of water and run it along the edge of the wonton.
Fold over and press down with a fork to seal.

Bake until golden brown or deep fry in oil.
Serve warm.

Before/After.

Served with Chimichurri Sauce:
4 oz. evoo
2 oz. lemon juice
2 oz. red wine vinegar
2 cloves garlic, minced
1 oz. parsley
1 oz. fresh oregano

Combine together in blender. Rest for two hours in refrigerator or overnight.
(Parsley may discolor, but is still good.)

Please try this out! It is great for appetizers and will not disappoint!

1. The Vampire Diaries on Netflix
I just started watching this show upon request from two good friends.
I am completely in love.
I literally can't turn it off!

2. Mary Kay Subtle Tanning Lotion 
-I apply this twice a day and absolutely love it! It gives you an all-over glow without the streaks.
It also comes with a nice light scent that doesn't smell like tanning lotion.
You should totally check it out!  



3. My Floppy Hat
I just ordered it off Etsy in Gray with my initials monogrammed in Turquoise script font.
Can't wait to get this in so I can wear this on the beach and by the pool.

Military Spouse Appreciation Day


You guessed it today is Military Spouse Appreciation Day..
And I've felt like royalty.
I got 20% off my purchase at Lowe's today, and they normally give you 10%. 
Pretty exciting.
Back to the point.
Household 6 Diva and Riding the Roller Coaster are hosting a Military Spouse Blog Hop!
Of course I had to participate..
Because like us regular blogging buds, us Mil-Spouse's stick together big time.
All of us are featuring a introduction about ourselves.

Here I go..
I am an Army wife.
My husband and I are stationed at Ft. Bragg in North Carolina.
He is an 11B or an Infantryman.
Right now he is in 4-73 Cav.
Which is a Cavalry unit.
He is on a "business trip" right now.
He recently reenlisted for 6 more years.
I cannot wait to see where this journey takes us.
We do not have any children unless you count our dog baby Liberty "Libby," Molly Emeril (rabbit) and Sushi George Clooney (fish).
But we plan on starting a family after I graduate from culinary school.
That's right. I'm going to be a chef.
I blog about pretty much everything:
Recipes, fashion, and life in general.
I love getting comments and interacting with my followers on a daily basis.

Weekend Festivities


Friday:
I went to a Fondue Party hosted by a great friend and Army Wife. 
She had so much to choose from. 
And overall successful fun night!

For the Fondue Party I wore:
Romper: BCBG
Shoes: Old Navy


Saturday:
(Cinco De Mayo)
Mrs. Lynch stayed the night all weekend.
We woke up. 
Met up with BL Babe.
Went Antiquing/shopping.
I scored these two pieces for our dining room.
(I'm gonna paint the one on the right to match the clock.)

Then we had lunch at our one of our favorite places, San Felipe. 
Mrs. Lynch, BL Babe, Me.

Then Mrs. Lynch and I headed to a Fiesta with a bunch of other Army Wives. 
I don't have any pictures from the night except my OOTN.

Sunday:
(Funday)
Mrs. Lynch and I met up with Lady B, Baby T and Auntie E.
We went strawberry pickin'. 
So much fun.

Later, Lynds came to stay the night. 
(So fun to have this many sleepovers.. In one weekend!)
We ate at a really great place, The Fairview Dairy Bar.
We had fried pickles.
The Tar-hill burger & banana pudding.  
All so delicious. We were stuffed.

We went home, changed it to jammies, watched Army Wives & called it a night!
I had so much fun this weekend!
Just what I needed.
No for next weekend.. 
Maybe an impromptu trip to the beach..?

Grocery Shopping For One

With a husband being deployed..
Sometimes I feel like grocery shopping for one is pointless. 
I buy a dozen eggs... I use 4.. Trash
Loaf of bread- Make one sandwich..Trash
Pork chops- Too many in pack.. Trash

See a trend.. Too much food for one person to eat.
OR 
I eat the same foods for TWO weeks to keep from wasting it..

Here is what I keep in my fridge.. 
Pepper Jelly (2 jars)
Margarine
1/2 dozen eggs
Silk Light Chocolate Milk
Cranberry Juice (made with Splenda)
Raspberry Lemonade---Amazing stuff. Only 50 calories for a glass..
Turkey bacon
Yogurt

Cheeses (shredded cheddar, string)
Real UNSALTED butter--- Salt is just a preservative in butter. Use unsalted.
Tuna with water-- I keep cans in fridge.. So tuna salad is cold once I make it.
Corn tortillas
Cilantro- I eat this stuff on everything
Guacamole ingredients.. (I keep ingredients for recipes in baskets, easy for grab&go prep)
Oranges


Freezer:
I always have Popsicle's
Wine bag
Frozen berries
Chicken breasts

Burritos
Fish fillets
Meatballs
Steak
Bagged steamed veggies

Of course I have some inspiration to keep me from eating everything in the house. 
Stress eater=moi!
